GRAPES:
Corvina, Corvinone, Rondinella and other grape varieties.

 

DRYING:
The time of the “appassimento” process depends on the climate and the grape variety.

 

AGEING:
Aged in oak barrels.

 

 

Long bottle maturation.

 


 

COLOUR:
ruby red with purple highlights.

BOUQUET:
raspberry jam.

FLAVOUR:
full, warm and velvety.

ALCOHOL CONTENT:
14 % Vol.

SERVING SUGGESTIONS:
Very mature and sharp cheeses served with honey and “mostarda” (Italian chutney); dry confectionery, chocolate biscuits.
A “conversation wine”.
